Ingredients:

4 pkg. (10 oz. each) pkgs. frozen spinach
1/2 cup chopped celery
1 cup small curd cottage cheese
1-1/4 cups sour cream
1/4 cup cream style horseradish
6 tbsp. mayonnaise
Salt, to taste
Watercress
Sliced cucumbers
Grated carrots

Directions:

Cook spinach according to pkg. directions; drain, pressing out moisture through sieve. Chop spinach, add celery, cottage cheese, 1/4 cup sour cream, 3 tablespoons horseradish, 4 tablespoons mayonnaise and salt to taste. Place in an oiled 1-1/2 quart ring mold; chill until firm. Unmold salad, garnish with watercress and cucumbers sprinkled with grated carrots. Blend remaining sourcream, horseradish and mayonnaise for dressing.
