Ingredients:

2/3 cup butter flavored shortening
1/4 cup sugar
1/4 cup packed brown sugar
1 egg
1-1/2 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup crushed peppermint candy

Directions:

In a mixing bowl, cream shortening and sugars; beat in egg. Combine flour,baking powder and salt; stir into the creamed mixture. Fold in the candy. Drop by teaspoonsful onto a greased cookie sheet. Bake at 350°F for 10-12 minutes oruntil cookie edges just begin to brown.

Maybe it's just me but... the cookies just stayed in a lump as I dropped them and just plumped a bit instead of spreading like drop cookies normally do. They do not look nice at all except that the red and green bits from the peppermints dresses it up a bit. For the second batch I tried flattening and shaping them on the cookie sheet. This helped a lot. I had to watch them carefully and pull them out at about 8 mins or the bottoms got too brown before it showed on the top. Taste is just OK. My chopper made some fine powder of the candy along with the bits and the mint taste was just a bit much. I may try to add the bits (sans fine powder) to a basic sugar cookie dough and see what happens.
