Ingredients:

4 cups mashed potatoes
8 oz. sour cream
8 oz. cream cheese, softened
1 tsp. dried chives or 1 tbsp. snipped fresh chives
1/4 cup dry bread crumbs
1 tbsp. butter, melted
1/2 cup shredded cheddar cheese
1/4 tsp. garlic powder

Directions:

In a large bowl, combine potatoes, sour cream, cream cheese, chives and garlic. Turn into a greased 2 qt. casserole dish. Combine bread crumbs with butter; sprinkle over potatoes. Bake at 350°F for 50-60 minutes. Top with cheese and serve immediately. Dish can be assembled a day ahead and baked just before serving.

4 C mashed potatoes doesn't seem like enough to go with the 8oz sour cream & cream cheese...or to serve 8 dozen people!
