Ingredients:

5 lb. Idaho potatoes
1 lg. onion
1 lb. bacon
1 stick butter
1 qt. Half & Half
8 oz. sour cream with chives
Salt and pepper, to taste

Directions:

Peel and dice potatoes and onions. Put them in a large pot and just cover with water and boil until they are just about done. While your potatoes and onions are cooking cook bacon and crumble. Add bacon and other ingredients to the potatoes, onion and water. Simmer until potatoes finish cooking.

This is the best soup! We add a little cheese on top and my husband always puts a hunk of corn bread in the bottom of his bowl before he pours his soup on the top.
