Ingredients:

3/4 cup shortening
1-1/4 cups sugar, divided
1 egg
1/4 cup molasses
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cloves

Directions:

In a mixing bowl, cream shortening and 1 cup sugar. Add the egg, molasses and vanilla; mix well. Combine dry ingredients; add to creamed mixture and mix well. Roll into 1-inch balls; roll in remaining sugar. Place 1-1/2-inches apart on ungreased baking sheets. Bake at 375°F for 10 minutes or until lightly browned. Cool on wire racks. Store in an airtight container.

This recipe has become a family and neighbourhood favourite. The kids in the neighbourhood literally knock on my door and ask if I have ginger cookies. To keep them chewy, make sure that you do not overcook.
