Ingredients:

1 cup packed brown sugar
3/4 cup butter or margarine, softened
1 egg
2 tbsp. milk
1 tsp. vanilla extract
2 cups all-purpose flour
1/2 tsp. baking soda
1/2 cup maraschino cherries, well drained
1/2 cup pecans, chopped
1/2 cup flaked coconut

Directions:

In a large mixing bowl, cream brown sugar, butter, egg, milk and vanilla. Combine flour, salt and baking soda, gradually add to creamed mixture. Fold in cherries, pecans and coconut. Drop by teaspoonfuls onto ungreased baking sheets. Bake at 375°F for 10-12 minutes or until golden brown.

They were excellent! I work in a retirement home, and every week, we engage in a little baking therapy, and they were as enlightening to make as they were good to eat. It was especially challenging making sure all cookies had cherry in them, which we did successfully.


One small question, the directions mention "salt" and the ingredients don't list it. We figured 1/4 teaspoon, and it seemed to work. Is that correct?
