Ingredients:

1 tbsp. cooking oil
1 md. onion, chopped
1 can (14-1/2 oz.) stewed tomatoes
1 can (15 oz.) black beans, undrained
1 tsp. dried oregano
1/2 tsp. garlic powder
Salt, to taste
1-1/2 cups instant brown rice, uncooked
1 lb. pork sausage links, cooked and sliced

Directions:

In a skillet, heat oil. Cook onion until tender. Add the tomatoes, beans and seasonings. Bring to a boil. Stir in rice; reduce heat and simmer 5 minutes. Add sausage and let stand, covered, 5 minutes.
