Ingredients:

1 pkg. Morningstar Farms veggie burgers crumbles
2 cans chili beans (make sure labels states vegetarian) or kidney beans will do fine
1 chili seasoning packet or season to taste with:
Chili powder
Cumin
Salt
Pepper
1 to 1-1/2 cup water, more as needed

Directions:

Heat a small skillet to about medium. Add the burger crumbles and allow to heat through. Add chili seasoning packet/seasoning blend and a cup or so of water (read package directions first if using preblended spice). Allow to simmer for about 5 minutes or until the liquid is heated well. Empty beans into a large stockpot and begin to heat on medium. Add the burger-crumble mixture to the beans. Allow all of this to simmer for at least 20 minutes, stirring occasionally. If desired, add extra water and chili powder. Serve hot with rice or crackers or over pasta. Enjoy!

My mom, who is a carnivore by nature, loves this chili, so don't hesitate to try it if you're not a vegetarian.

Although this is delicious hot off of the stove, it actually seems to taste better when heating up for lunch the next day, so you might want to make it the day before and store in the fridge overnight.
