3 lb. boneless beef chuck
1 jar (8 oz.) dilled pickles
1 bottle (8 oz.) BBQ sauce (or homemade)
1 tbsp. garlic powder
1 tsp. thyme or cumin
Salt and pepper, to taste

Directions:

Season roast with seasonings and place in a crockpot. Put in just enough water to cover roast. Add half of the jar of pickles including juice. Cook on low until meat is tender and shreds easily, about 6 hours. Drain and shred beef, discarding pickles. Place beef back into pot. Add all of the BBQ sauce and the rest of the jar of pickles. Simmer for 45-60 minutes on low, stirring occasionaly.
Serve on toasted kaiser rolls, with additional BBQ sauce and new, crisp pickles and horseradish sauce.

This is great with homemade german kaiser rolls. Works well with pork also.
