Ingredients:

2 cups all-purpose flour
1 cup quick oats
3 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
8 tbsp. butter, softened
1-1/2 cups brown sugar, firmly packed
4 eggs
2 tsp. vanilla
2 lg. granny smith apples
2 tbsp. lemon juice
1 cup golden raisins (optional, but highly suggested!)

Directions:

Heat oven to 350°F. Sift together flour, baking powder, baking soda, salt and cinnamon. Stir in quick oats. In separate bowl, beat butter and sugar together until fluffy (about 3 min. w/ electric mixer). Beat in eggs and vanilla. Stir in flour mixture. Peel, core, and dice the apples. Toss with lemon juice and add to batter. Fold in raisins. Spoon batter into greased muffin pan or use paper liners, filling each cup about half full. Bake 18-22 minutes or until muffins are golden brown and firm.
