Ingredients:

6 to 8 cloves garlic, peeled
5 md. potatoes or 2 slices dry bread about 2-inches thick
1 pint olive oil
1 tbsp. lemon juice
Salt, to taste

Directions:

Pound or process the garlic until very smooth, add the olive oil and lemon juice slowly as though making mayonnaise. When it has been absorbed mix in a small glass of cold water and serve with whatever you fancy to eat.

You have got to have a real passion for garlic to eat this! It is traditionally served with crispy fried cod or any battered fried fish but my Dad used to adore it with a good old steak.

If you use bread to make it the crusts should be removed and the bread soaked in water for two minutes then squeezed dry in the hand. If you use potatoes then boil them in their skins and then peel them before use.
