Ingredients:

1/2 cup water
1/2 cup skim milk, room temperature
3 egg whites, whipped
1-1/2 cups grated zucchini
1 tsp. vanilla
1/2 cup applesauce
2 cups bran, unprocessed
1 tsp. cinnamon
1/4 tsp. nutmeg
1 dash ginger
1 dash cloves
1 tsp. baking powder
1 tsp. baking soda
1/2 cup granulated sugar

Directions:

Preheat oven at 350°F. Prepare 12 muffin pans with cooking spray and flour. In a mixing bowl, combine water, milk, egg whites, zucchini, vanilla and applesauce. In another mixing bowl, combine bran, cinnamon, nutmeg, ginger, cloves, baking powder, baking soda, and sugar. Mix wet ingredients with dry ingredients just until moistened. Pour into prepared pans. Bake for 30 minutes.

Comments from Linda Evans :

Zucchini may be substituted with 2 cups shredded apples, 1 cup pumpkin or 1 cup grated carrots.

I JUST finished making this recipe and it is AWFUL!! I put the muffins in the oven and some of the "batter" just exploded out of the pan and is now on the bottom of the oven. Watery batter. Not good at all.



I just printed this recipe. I noticed there was no mention of flour, just bran. Is flour not required?
