Ingredients:

1/2 cup butter
2 squares (1 oz. each) unsweetened baking chocolate
1 cup sugar
3/4 cup all-purpose flour
2 eggs

Filling:
2 cups powdered sugar
3 tbsp. butter, softened
1 pkg. (3 oz.) cream cheese, softened
1/2 tsp. peppermint extract
5 drops green food coloring
2 drops yellow food coloring

For Drizzling:
1 square (1 oz.) unsweetened baking chocolate, melted

Directions:

Heat oven to 350°F. In 2-quart saucepan melt 1/2 cup butter and 2 squares chocolate over medium heat, stirring constantly, until smooth (4 to 6 minutes). Stir in all remaining brownie ingredients until well mixed. Spread into greased 9-inch square baking pan. Bake for 25 to 30 minutes or until brownie begins to pull away from sides of pan. Cool completely. In small mixer bowl combine all filling ingredients EXCEPT chocolate. Beat at medium speed until creamy. Spread over cooled bars. Drizzle with melted chocolate. Cool completely; cut into bars. Store in refrigerator.

I make this recipe over and over for many different parties. Every potluck at work I am asked to make them. I have altered the recipe for low fat and it was still a hit.


Very good! I learned my lesson once again though... only use real butter! Otherwise, the brownies just kinda fell apart whenever I wanted to do something with them :( But the brownies were still excellent! I made them just in time for St. Patty's Day and they were a hit!
