Ingredients:

3/4 cup sugar
1/4 cup unsweetened cocoa powder
2 tbsp. cornstarch or 1/4 cup all-purpose flour
2 eggs, beaten
1 tbsp. margarine or butter
1-1/2 tsp. vanilla extract
2-2/3 cups milk

Directions:

In a heavy medium saucepan combine sugar, cocoa, and cornstarch or flour. Stir in milk. Cook and stir over medium heat until mixture is thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Gradually stir about 1 cup of the hot mixture into the beaten eggs. Return all of the egg mixture to the saucepan. Cook until nearly bubbly but DO NOT BOIL. Reduce heat. Cook and stir for 2 minutes more. Remove from heat. Stir in margarine and vanilla. Pour pudding into a bowl. Cover the surface with clear plastic wrap to prevent a skim forming on top. Allow to cool.

I reduced the sugar to 1/2 cup, as I find most pudding recipes too sweet for my taste. It was a very good pudding.


I have NEVER made chocolate pudding before and was a little scared. This recipe turned out great. My family will never eat store bought pudding again. I topped it with homemade whipped cream and a strawberry for garnish. It was so great grandma's puddin' is now our puddin'.
