Ingredients:

2 lb. fresh spinach or 2 pkg. (10 oz. each) frozen spinach
1 lb. ground round
3/4 cup finely chopped onions
1/2 tsp. grated nutmeg
1/4 tsp. cinnamon
1 cup cooked rice
2 eggs, lightly beaten
3 slices bacon
Salt and freshly ground pepper, to taste

Directions:

Preheat the oven to 350°F. If fresh spinach is used, rinse it well in several changes of cold water. Drain, place in a pot and cook in only the water that clings to the leaves. Chop well. If frozen spinach is used, just defrost it and squeeze out excess moisture. Combine the spinach, beef, onions, salt, pepper, nutmeg, cinnamon, rice and eggs. Pack the mixture into a buttered 9x5 inch loaf pan. Arrange the bacon on top. Bake for 1 hour or until firm. Serve with a tomato sauce.
