1 lb. ground beef
1/2 lb. ground veal
1/2 lb. ground pork
2 eggs
1/4 cup coarsely chopped green pepper
1/2 cup fine bread crumbs
3/4 cup chopped parsley
1/4 cup finely chopped chives
2 tbsp. finely chopped basil
1 tsp. salt
1/2 tsp. freshly ground pepper
Bacon slices, to cover top

Directions:

Preheat oven to 350°F. In a mixing bowl combine all the ingredients except the bacon slices. Using the hands, blend well; do not overwork the meat or it will produce a meat loaf that is too tightly packed. Line a 9-inch pie plate with aluminum foil. Shape the mixture into an oval loaf, place on the foil and cover with bacon slices. Bake 1-1/2 hours. Serve with fresh tomato sauce.
