Ingredients:

6 green apples, pared and cut into eighths
3/4 cup sugar
3/4 cup water
1 9-inch unbaked pastry shell
3/4 cup cream
1/2 cup sugar
2 tbsp. cornstarch
1 pinch salt

Butter

Directions:

Prepare apples while bringing 3/4 cup sugar and water to boil in a wide saucepan. Add apples, cover and cook gently until syrup has almost cooked away and has become thick. Arrange in pastry shell.

Combine cream, sugar, cornstarch and salt; stir until smooth. Pour over apples. Sprinkle with cinnamon and dot with a tablespoon or two of butter. Bake at 425°F about 35 minutes or until crust is brown and filling thickened.
