Ingredients:

1-1/2 cups all-purpose flour
1 cup sugar
1/4 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1-1/3 cups ripe bananas, mashed
1/3 cup vegetable oil
1 egg
1 cup miniature semisweet chocolate chips

Directions:

In a large bowl, combine the first six ingredients. In a small bowl, combine bananas, oil and egg; stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups 3/4 full. Bake at 350°F for 20-25 minutes or until muffins test done.

I substituted brown sugar for the white and also 1 and 1/2 cups of pancake mix for the flour and levening and melted butter for the oil. They were very very good.


This recipe was really tasty. However, I needed to add about 1/3 cup of milk to get the right consistency for muffins.
