2 md. carrots
1 cup fresh mushrooms
1 can black beans
8 oz. corn, fresh or frozen
1/4 cup bulger
1/4 tsp. garlic salt, powder, or whole garlic
1/2 cup pearl barley
1/2 onion, chopped
1/2 cup parsley, chopped
1-1/2 cups vegetable broth
1/2 cup shredded cheese

Directions:

Mix everything except cheese, together. Pour in rectangular casserole. Place in oven at 350°F for 1 hour, stir, sprinkle cheese, and bake for 15 minutes more. If the liquid goes away add more.

A lot of the barley made it through uncooked. I
recommend putting the ingredients in in layers.
Barley/bulgar on the bottom, then the veggies, with the corn on top. |
