Chocolate Oatmeal No-Bake Cookies

Ingredients:

2 cups Sugar
1 stick Margarine or butter
1/2 cup Milk - skim, 2% or whole
4 tbsp. Hershey's Baking Cocoa or any brand
3 cups Rolled Oats - any brand
1/2 cup Peanut butter - creamy or chunky
1 tsp. of Vanilla

Directions:

In the pan on medium heat add:
2 C Sugar
1 Stick Margarine or butter
1/2 C Milk - skim, 2% or whole
4 TBSP Hershey's Baking Cocoa or any brand

In a large bowl add:
3 C Rolled Oats - any brand
1/2 C Peanut butter - creamy or chunky if you're feeling crazy

Heat sugar mixture, while stirring, to a boil. When it starts to boil leave it for one minute. Stir again. Remove from heat then add 1 TSP of Vanilla.
Pour mixture over the oats and peanut butter in large bowl. (Some people like to add coconut, chocolate chips or nuts)

Let it sit and cool for at least 30-60 minutes then drop by spoonful on wax paper or foil.

Chill.

(These are better after a couple days of chilling if you can wait.)

If your no bakes are consistently runny, here's a great recipe for a more stiff mixture. Adding more peanut butter will make them dry. Variations include adding coconut, nuts or chocolate chips.
