3/4 cup margarine, softened
3 egg whites, whipped
2 tsp. vanilla
1-1/2 cups granulated sugar
1-1/3 cups unbleached flour
1/2 tsp. baking powder
3 tbsp. cocoa powder
3 cups miniature marshmallows
Topping:
1 cup semisweet chocolate chips, melted
1 tbsp. margarine, melted
1/2 cup peanut butter
1 cup crispy rice cereal

Directions:

Prehat oven to 350°F. Prepare a 9x9x2-inch baking pan with cooking spray and flour. To prepare batter, combine margarine, egg whites, and vanilla in a mixing bowl. In another mixing bowl, combine sugar, flour, baking powder, and cocoa powder. Spread in prepared pan. Bake for 15 minutes. Sprinkle marshmallows evenly over baked batter; return to oven for 3 minutes. Using a knife dipped in water, spread the melted marshmallows evenly over cake. Cool.
To prepare topping, combine chocolate chips, margarine, and peanut butter in a saucepan. Cook over low heat, stirring constantly, until melted and well blended. Remove from heat and stir in cereal. Spread over bars. Chill.
