Ingredients:

2 tbsp. olive oil
1 md. onion
2 garlic cloves
1 cup bread crumbs (I use pre-seasoned Italian bread crumbs)
1 container mixed shredded cheese Romano, Parmesean, Asiago
1 square package cream cheese
1 cup mayonnaise
1 can quartered artichoke hearts (cut up)

Directions:

Preheat oven to 400 degrees. Saute the onion and garlic in olive oil. Mix onion, garlic, mayo, and cream cheese in a bowl. Mix in artichoke hearts and 3/4 of the bread crumbs and mixed cheeses. Spread out in the bottom of container, then top with remainder of breadcrumbs and then the rest of the mixed cheese. Bake for 30 minutes, or until top is browning and middle is melted. Serve with veggies, fresh or toasted bread, or crackers (Triscuits and Ritz are crowd faves).

Comments from knellsch :
