Ingredients:

1 can garbanzo beans(chick peas)
1/4 cup EVOO extra virgin olive oil
4 cloves of fresh garlic
4 tbsp. spoons Tahini (sesame paste) ((readily available in natural food or import markets))
1/4 cup fresh lemon juice
salt and pepper to taste
cumin to taste (optional)

Directions:

Drain the beans and reserve the liquid in a cup. Combine all ingredients in a food processor and puree until creamy. You may need to add some of the reserved juice for proper consistency.

Taste and adjust salt, pepper, lemon or oil.

To serve: Spread in a shallow plate, drizzle with some EVOO and garnish with minced parsley. Serve with pita wedges, pita chips or cut veggies.

There is NO exact recipe for hummus. The ingredients are mere guidelines and should be modified to your own taste. That means as the process is done you MUST taste and adjust as needed. Garlic and lemon...lots of both make this outstanding.
