Ingredients:

2-1/3 cups flour
1/2 cup splenda
1-1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup cold butter
1 cup part-skim ricotta cheese
1 cup dried fruit
1 tsp. vanilla
1 lemon grated peel
2 lg. eggs
1/3 cup toasted nuts

Directions:

1. preheat oven to 325' grease large cookie sheet or use a silicone sheet.
Sift dry ingredients. In food processor add the dry ing. wiz to mix. Add the cold butter cut up to resenble crumbs. Add the cheese and eggs & vanilla & dried fruit and nuts and the lemon peel. Mix until comes together. Take out and kneed together.
Flatten out to a 8x10 shape on the silicone sheet and fold almost in half so you have a long loaf with a ridge on the side. Bake for 60 minutes or until internal temp is 200'. I have made with cranberries and have used apricots. The berries get nice in the food processor or you can cut them up.
