Ingredients:

Fresh or frozen zucchini (best with fresh zucchini)
sm. yellow onion or frozen chopped onions
Garlic powder or fresh oven roasted garlic
Butter or margarine (about 1-1½ sticks)
Mozzarella cheese
Crushed red pepper (for taste)
Black pepper
Bread crumbs (varies upon taste)
Grated romano or parmesean cheese

Directions:

Simple Zucchini Bake

Ingredients:
Fresh or frozen zucchini (best with fresh zucchini)
Small yellow onion or frozen chopped onions
Garlic powder or fresh oven roasted garlic
Butter or margarine (about 1-1½ sticks)
Mozzarella cheese
Crushed red pepper (for taste)
Black pepper
Bread crumbs (varies upon taste)
Grated romano or parmesean cheese
Medium sized greased aluminum pan or pyrex baking dish

Slice zucchini into thin slices (about ¼ inch thick)
Melt butter or margarine in microwave until liquid.
Dice onions into small pieces) Place zucchini and onions in large mixing bowl.
Add melted butter or margarine to zucchini and onions.
Stir until zucchini is wet from the butter or margarine.
Add mozzarella cheese and grating cheese.
Stir until zucchini is coated with butter and cheeses.
Add black pepper, garlic powder, and crushed red pepper.
Stir until all ingredients are well coated.
Add breadcrumbs gradually so mixture won’t get dry.
Sprinkle a thin layer of bread crumbs on top and smooth out with spatula.
Add the total mixture to the pan and bake at 450 degrees for about 45 to 60 minutes.
Bake until golden brown or until desired consistency
For a more crispy consistency put under broiler for a few minutes approximately 5-10 minutes more.

• Please Note*- This recipe is one of those recipes that measuring is not crucial I simply “eyeball” it depending on the amount of zucchini I have to work with. Use your own judgement when preparing.
