Ingredients:

3 lg. sweet apples, pared, cored, diced
1 lg. jicamaa, pared, diced
1 tbsp. lemon juice
1/2 cup sweet coconut
1/2 cup salty peanuts, chopped
1/2 cup mayo (light is good!)
1/4 cup dried cranberries
1/2 tsp. red chili flakes
2 tbsp. flax seeds

Directions:

In a large serving bowl, combine the diced apples and diced jicama; generously sprinkle with lime juice and toss to coat.
In a large measure cup, combine coconut, peanuts, mayo, cranberries, red chili flakes and flax seeds until well coated.
Pour over apples and jicama and toss to coat well.
Cover and chill until ready to serve, tossing ocassionally. Drain well before serving (I serve with a slotted spoon).

A very nice lady at a church supper shared this with me. When you want something diffeent from that green salad, this is it! Crunchy apple and jicama, sweet coconut, salty peanuts,and tart cranberries all mixed into a creamy dressing...yummy!
This is really good side with grilled chicken or baked ham; and it is a real hit at potluck suppers; also a nice addition to a ladies lunch served with deli meats and crusty rolls.
