7-189/200 oz. unsalted butter (Softened but not melting)
13-179/200 oz. sugar
2 eggs (beaten)
49/100 oz. vanilla extract
9-9/20 oz. flour
21/200 oz. baking soda
21/100 oz. salt
21/200 oz. ground cinnamon
21/200 oz. nutmeg
15-89/100 oz. apples (Cored and roughly chopped into 1-inch pieces or smaller; don't peel)

Directions:

Pre-heat oven to 275.
Coat Bundt pan with cooking spray with flour
Combine Flour, Baking soda, Salt, Cinnamon and Nutmeg together (pulse in food processor). Set aside
Beat eggs and vanilla together in small bowl
Using a stand mixer on medium, mix the butter to spread around the bowl, slowly add sugar and beat until mixture lightens noticeably in texture and increases slightly in volume.
Reduce speed to "stir" and add the eggs very slowly.
Work in the flour mixture very slowly until just incorporated. Do not over-mix.
Stir in apples.
Pour batter into pan, bake for 1 hour 45 minutes, until toothpick comes out clean.
Cool in pan.
