Total Time:

1 -2:00

Ingredients:

Meatballs:
1 lb. ground beef (lean is good)
1 sm. or 1/2 large white onion, finely chopped
1 tsp. red chili flakes
2 cloves garlic, minced
1/4 cup rolled oats
2 tbsp. evaporated or whole milk

Sauce:
1 sm. onion or 1/2 large white onion, chopped
1 cup ketchup or 1/2 cup ketchup and 1/2 cup salsa of your choice
2 tbsp. white vinegar
1 jalapeņo, seeded and chopped
2 cloves garlic, minced
1 cup water
2 tbsp. butter
2 tbsp. lemon juice
2 tbsp. Dijon or grainy mustard (not hot dog mustard!!)
2 tbsp. brown sugar
2 tbsp. Worcestershire sauce
Salt and black pepper to taste

Directions:

In a bowl, combine all ingredients together. Cover bowl and chill for 15 minutes. Form into desired size meatballs and brown in hot skillet; drain on paper towel. Arrange in a large baking dish.
Sauce

Place all ingredients in a medium saucepan. Bring to boil, and boil 5 minutes. Pour sauce over meatballs in baking dish. Bake uncovered for 1 hour in a 350 degree F oven.
Serve over rice or noodles, or with crusty garlic bread, and a crispy green salad.

This can easily be doubled for a potluck or large gathering. From the pound of ground beef, I usually get 25 small meatballs.
Enjoy!

Comments from solass :

My mother-in-law gave me this after I had enjoyed it at her home several times. I have since made a few changes that reflect our tastes. It is a bit time consuming to prep, but well worth the effort. Great company dish, and if it is just for 2, you will have leftovers to share or freeze.
