Ingredients:

1 cup molasses
2 tbsp. butter or margarine
1/4 tsp. ground nutmeg
pinches baking soda
pinches salt
2 well beaten eggs

Directions:

Mix molasses, butter, nutmeg, soda, and dash salt in heavy saucepan. Bring to a boil over low heat. Stir moderate amount of hot mixture into eggs; return to pan. Cook and stir till thick, about 1 minute. Chill. Makes 1 1/2 cups.

When the luxury of cream was available on the trail, it was put in the back of the wagon and the jogging over the rough trails churned it into butter. The butter was used on bread or extended by making Molasses Butter.
