Ingredients:

3 lb. of small Granny smith apples, peeled and sliced
1 cup brown sugar
1/2 cup granulated sugar
1/2 stick of butter, cut into small chunks
1/4 cup of flour
2 tbsp. cinnamon
2 9-inch pie crusts

Directions:

Preheat oven to 325 degrees.

Mix the sugars, flour, and cinnamon together in a big bowl.

Lay bottom pie crust in large pie pan and press against bottom and sides well leaving no air bubbles.

I peel apples with a potato peeler and slice them with an apple slicer. Roll each slice of apple in bowl and lay in bowl. The apples will mound above the rim of pie pan. Pour the rest of the sugar/flour mixture over the top of the apples. Dot the small chunks of butter allover the top of the filling.

Add the top crust and seal the crusts together, I tuck the top crust in around the apples and press the bottom crust over the top to keep juices in. Cut 4 small vents into the top crust. Sprinkle with cinnamon sugar if you want to.

Bake in the oven for an hour, check if crust is done. Take it out when the top crust and bottom crust are golden brown, do not overcook the crust.

It takes an hour or more in my oven.
I use a clear glass pie pan so I can see when the crusts are done.
