Strawberry Mint Ice Cream with Stevia

Ingredients:

2 cups fresh cream
1 cup milk
2 egg yolks (0ptional)
2 cups strawberries
Leaves from one tall stalk of mint
2 packets Stevia (low glycemic herbal sweetner)

Directions:

Puree strawberries and mint leaves together (you can leave the tops on the strawberries, just remove strawberry and mint stems).

Whisk puree in with cream, milk, yolks and stevia. Chill in bowl in freezer for 20 minutes. Remove from freezer and add to Cuisinart Ice Cream Maker. Process until it begins to mound up, about 20 minutes. Remove to a container and place in freezer for 4 hours before serving.
