Ingredients:

2 cups flour
3/4 cup sugar
1 tbsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. nutmeg
1 cup walnuts, coarsely chopped
1 egg, well beaten
1 cup medium thick applesauce
1/4 cup cooking oil

Directions:

Mix sifted dry ingredients and nuts together. Combine egg, applesauce and cooking oil. Add to dry ingredients and stir until just blended.

Pour into 5 x 9 greased loaf pan. Bake in moderate oven, 350 F. for 50 minutes.

I tried this recipe and followed it to the letter and got crap as a result. 1 tbsp of baking powder?! I did a test batch and while I was waiting my left over batter started to rise on its own.


This is a delicious recipe. However, the recipe did not specify if the applesauce was sweetened or unsweetened. I used unsweetened and then added some dried cranberries for a bit of color and additional flavor. The family loved it.
