Ingredients:

1 lb. sea bass fillet
4 tbsp. curry powder
Salt
Coarse black pepper
1 cup water and vinegar combined
2 tsp. Garlic powder
4 lg. garlic pegs
1 lg. cayenne pepper with seeds
1 sm. bell pepper (red)
1 lg. diced carrot
2 stalks scallions
1 sm. sweet onion
2 tbsp. cooking oil
1 cup water

Directions:

Cut Bass fillet into 2 thick cubes. Wash cubes in water vinegar solution. Remove Cubes from solution.

In a bowl combine fish, 3-1/2 tablespoon curry powder,salt and pepper to taste. Add garlic powder and 1 tablespoon Oil .Rub ingredients into fish.

Mince garlic, cayenne pepper and scallions and add to fish mixture. Add carrots. In a sauce heat 1 tablespoon oil and add remaining half table spoon curry. Add fish to hot oil. Add half cup water, allow to cook for 10 minute on medium heat. Slice red bell peppers and onions and add to pot. Allow to simmer for 5-10 minutes. Serve with a side of white rice .
