1 pie shell (unbaked)
4 lg. sweet potato (cooked)
4 oz. soften butter
1-1/2 cups granulated sugar
2 lg. eggs
1-1/2 tsp. cinnamon powder
1 tsp. nutmeg (grated)
1 tsp. vanilla extract
4 tbsp. brown sugar
1/2 cup coconut milk(subt.wth evaporated milk)
1/2 cup rum

Directions:

FILLING
slightly crush potatoes.Add coconut milk,butter and granulated sugar and mix well.Add eggs and mix.Add 1teaspoon cinnamon ,1teaspoon nutmeg and Vanilla and mix. Lastly add rum.
PIE CRUST
Allow pie crust to cool to room temp.
As this is a sugary pie I recommend that the pie shell be slightly floured.
Preheat oven to 350 degrees. Crarefully place pieshell into dish and add filling and bake for 35-40 minutes.
TOPPING
1/2 cup coconut milk
4 tablespoon brown sugar
1/2 teaspoon cinnamon
mix together
Mixture should be slighty thick(syrup like)optional
Browning (a food colring made from sugar)
pour unto pie 5 minutes before baking is completed

This is an jamaican take on a Sweet Potato Pie.The use of Coconut Milk and some rum makes it original .The toping is also a technique I learnt from my Mother who lives in Jamaica
