1 pkg. Uncle Ben's Long Grain & Wild Rice
1/2 cup chopped onion
1/2 cup finely chopped carrot
1/2 cup flour
3 cups fat-free chicken broth
1 cup cooked chicken or turkey

Directions:

Prepare rice according to package directions. In a large pot, saute onions and carrots over medium heat until tender. Stir in the flour. Gradually add the broth and let the mixture come to a boil, stirring constantly. Add the cooked rice and cooked chicken and simmer 5 minutes.
