1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
3 tbsp. instant coffee or espresso
2 tsp. vanilla
2 eggs
2/3 cup milk
1-3/4 cups flour
1/2 tsp. salt
1 tbsp. baking powder
3/4 cup semisweet chocolate chips
1-1/2 cups walnuts, coarsely chopped

Directions:

Preheat oven to 350°F. Grease and flour 12 muffin pan cups (or use paper, but they may stick a little). Cream butter with the sugars, coffee and vanilla. Beat together eggs and milk. Combine the flour, salt, and baking powder. Alternately add the wet and dry ingredients to the butter mixture. Stir just to combine. Add the chips and walnuts. Fill the tins full. Bake for 20-25 minutes. Cool 5 minutes, then remove from the tinsand finish cooling on racks.

User Reviews:

I tried it twice, the coffee didn't taste very prevalent the way the recipe wrote it, so I doubled it the second time, and I liked it even better. Definitely a dessert muffin.
