Total Time:

Ingredients:

1/4 cup I Can't Believe It's Not Butter!
1/3 cup brown sugar, firmly packed
1/4 cup light corn syrup
1/3 cup all-purpose flour
1 tbsp. unsweetened cocoa powder
1/2 cup pecans, finely chopped
1 tsp. vanilla extract

Directions:

Preheat oven to 350°F. Spray baking sheets with non-stick cooking spray; set aside. In medium saucepan melt butter, stir in brown sugar and corn syrup. Bring to a boil, stirring constantly, until sugar is dissolved. Remove from heat; stir in remaining ingredients until well blended. Drop mixture by teaspoonfuls 3-inches apart on prepared baking sheets. Bake 9 minutes or until cookies spread thin and are deep brown (cookies will still be soft). Cool 2 minutes on sheets. Working quickly with spatula, remove cookies to wire rack; cook completely. Sprinkle, if desired, with confectioners' sugar.
