Ingredients:

4 to 6 lb. moose roast
1/2 cup vegetable oil
2 tbsp. red wine vinegar
1 tsp. curry powder
1 clove garlic, crushed
1/2 cup pancake mix
1 pinch paprika
1 tsp. sea salt
Fresh ground pepper to taste

Directions:

Place meat in a roasting pan and roast at 400 F. for 15 minutes.

Meanwhile, in a small bowl whisk together oil, vinegar, curry and garlic powder. Baste meat with this mixture, reduce heat to 325 F. and roast another 15 minutes.

Meanwhile, in a small bowl mix together pancake mix, paprika, salt and pepper. Coat meat all over with this mixture; roast another 2 1/2 hours for medium meat. Let roast stand 15 minutes before carving.

Serves 8 to 10.
