Ingredients:

2 lb. moose or buffalo, cut in 1 inch cubes
1/2 cup all purpose flour
1/4 cup vegetable oil or lard
8 md. russet potatoes, diced
4 stalks celery, diced
2 carrots, diced
1 sm. turnip, diced
1 md. onion, diced
3 cloves garlic, minced
2 cups water
1 tsp. all purpose flour
1/2 cup cold water
Salt and pepper to taste

Directions:

Dredge meat in 1/2 cup flour.

In a large saucepan, heat oil over medium high heat. Brown meat on all sides.

Add potatoes, celery, carrots, turnip, onion, garlic and 2 cups water; bring to a boil, reduce heat and simmer, uncovered, 1 1/2 hours or until meat and vegetables are tender.

To thicken stew if desired, whisk 1 tsp. flour into 1/2 cup cold water and stir slowly into stew. Cook, stirring, until thickened. Season with salt and pepper. Serves 6 to 8.
