German Marrow Dumplings in Consomme (Markklosschen)

Ingredients:

2/3 cup beef marrow
4 slices stale bread
1/4 cup milk
2 eggs
2 tbsp. all-purpose flour
Salt and pepper to taste
1/8 tsp. ground nutmeg
6 cups consomme

Directions:

Scoop marrow from marrow bone with sharp pointed knife. Melt over low heat. Soak bread in milk and squeeze dry with hands and add to the melted marrow. Combine all ingredients except consomme and blend thoroughly. Drop dumplings by teaspoonsful into simmering consomme. Cook until they float to the surface. Makes 4 to 6 servings.
