Ingredients:

1 onion
2 ribs celery
1 green pepper
2 tbsp. oil
Salt and pepper
1-1/2 cups bread crumbs
1 tbsp. prepared horseradish
3 tbsp. catsup
1 packet Lipton beefy onion soup mix
1 tbsp. dried onions
1/2 tbsp. tarragon
2 eggs
5 lb. ground beef

Directions:

Heat oven to 350 degrees Chop onion, celery and green pepper. Heat oil in a skillet. Add vegetables. Season with some salt and pepper. Stir occasionally and fry for a few minutes till the onions in the pan begin to turn translucent. Transfer the fried vegetables to a large bowl, along with the breadcrumbs, horseradish, catsup, onion soup mix, dried onions and tarragon. Mix with a fork. In a small bowl beat the 2 eggs with the fork. Add the beaten eggs to the breadcrumb mixture. Combine well. Add the ground beef and using hands mix everything very well. Transfer meat mixture to a foil lined roasting pan or baking dish. Shape into a loaf. Place in oven and bake for 1 hour and 15 minutes (75 minutes total).

Most meatloafs seem to taste the same no matter what you do. This recipe produces a meatloaf that is a cut above the rest. This is my own recipe that I've tweeked over a lifetime. For the breadcrumbs I use white sandwich bread that I dry and then crush.
