Crostini con San Marco/ Crostini with Capers and Mozzarella

Ingredients:

1 loaf bread cut thin into slices no thicker than your pinky with crust removed
4 fresh small mozzarella cheeses in the water, halfed
2 tomatoes, sliced thin
3 tbsp. chopped capers that have been drained and rinsed, and chopped
4 filets of anchovies (optional)
Chopped basil

Directions:

Preheat the oven to 450F. Cut the slices of bread in half. Place the Mozzarella and ½ an anchovy fillet on each piece of bread. Sprinkle some of the chopped cappers on top of the crostini and top with a tomato slice. Bake until the cheese is melted and the bread is lightly toasted. Garnish with the basil.

This is a very simple appetizer, if your have a toaster oven, use the toaster oven, works really well
