Ingredients:

1/4 lb. of pancetta or slab bacon, 1/4 inch cubed
2 cloves of garlic, sliced
1/2 onion diced or 1 leek sliced thin
1-1/2 cups peas
1 cup of white wine
2 cups of bechamela
1/2 cup of grated Grana Padana or 1/4 cup of Pecorino

Directions:

In a sauté pan over a medium heat, brown the pancetta and drain off most of the fat except 1 tablespoon. Add in the garlic and onion and sauté till soft and translucent. Next add in the peas and wine and reduce the liquid by 3/4ths. Add the bechamela and simmer for about 5 minutes, add in the Grana Padana or Pecorino and serve over your favorite pasta or pork roast
