Mushroom and Leek Sauce (Sugo di Funghi e Porri)

Ingredients:

2 leeks, washed, halved and chopped into ribbons up to the beginning of the green end
3 cloves garlic, thinly sliced
2 lb. mushrooms (Button, Cremine, whatever you can get your hands on)
3 sprigs thyme
1 cup white wine
1 cup tomato sauce
Salt and pepper (seasoning as you go)

Directions:

In a heavy sauce pan over a medium heat, sauté the leeks, garlic, mushrooms and thyme for about 15 minutes till most of the liquid has been leached out of the mushrooms and evaporated. Next add in the wine and simmer for 10 minutes till reduced by about half. Add in the tomato sauce and simmer for 5 minutes and it’s done.
