48 slices day old brad, trimmed of all crusts
2 lb. cheddar cheese, thinly sliced
16 eggs
10 cups milk
2 tsp. prepared mustard
4 tbsp. minced onion
4 tsp. salt
1/2 tsp. pepper

Directions:

Arrange half the bread slices in greased baking dishes 2 inches deep. Cover with cheese slices. Top with remaining bread. Beat eggs. Add milk, mustard, onion, salt, and pepper, and blend in. Pour over bread and cheese. Refrigerate 1 hour or overnight. Bake uncovered at 325 F. for about 50 minutes or until puffy and brown. Serves 24.

This is a puffy egg and cheese dish. This brunch recipe is easily multiplied to serve about two hundred people. Serve with sliced ham, orange juice, rolls, and coffee. Make the night before and bake for brunch.
