90 pork chops
12 md. onions, cut in slices and separated into rings
Sauce:
12 cups tomato juice
3/4 cup vinegar
6 tbsp. Worcestershire sauce
2 tbsp. dry mustard
3 cups finely chopped onion
1 tbsp. chili powder
1 tbsp. salt
1/2 tsp. pepper

Directions:

Brown all chops, keeping in mind browning is the main objective, not necessarily cooking them. Layer in 2 large roasters, covered each layer with onion rings.
FOR THE SAUCE: Combine all sauce ingredients in an extra large saucepan. Bring to boil and allow to simmer uncovered for at least 10 minutes. Pour over chops. Cover. Bake in 350 F. oven for 1 1/2 hours. Remove covers. Continue to bake 20 minutes longer. Serves 45 people, 2 chops each. Allow at least 30 minutes extra time if taken from refrigerator to oven.
