Ingredients:

32 chicken thighs
32 chicken breasts, cut into 3 pieces each

Coating:
6 cups all purpose flour
6 tbsp. salt
1-1/2 tbsp. pepper
6 tbsp. paprika

Directions:

Have butcher cut breasts unless you have a cleaver. A small hatchet works well. Put cardboard over breadboard for cutting without gouging.

Combine flour, salt, pepper and paprika in large paper bag (or plastic bag or large container with tight-fitting cover). Put several pieces of chicken in bag. Shake to coat. Place on baking pans. Brown in 450 F. oven for 20 minutes until brown. Arrange in 2 large roasters when finished browning. If you use broiler, turn to brown both sides.

Bake covered in 350 F. oven for 1 1/2 to 2 hours until tender. Allow extra half hour if refrigerated. Serves 50.

This can be made up well before you need it. Great for family gatherings. Use all white meat or a larger proportion of dark as desired.
