Scottish Fried Herring with Mustard Sauce

Mustard Sauce:
1 tbsp. butter
1 tbsp. flour
1 cup milk
2 tsp. mustard

Fish:
4 fresh herring, cleaned and filleted
1 egg, beaten
1 cup coarse oatmeal
4 tbsp. butter

Directions:

To prepare the mustard sauce, melt the butter in a small saucepan. Blend in the flour and gradually add the milk. Stir until thickened, then blend in the mustard. Keep warm.

Dip the herring into the egg and coat with the oatmeal.

Melt the butter in a skillet and fry the herring until tender, about 8 to 10 minutes. Serve with the mustard sauce. Serves 2.
