Ingredients:

1 cup butter
1/2 cup granulated sugar
1/4 tsp. salt
1 egg yolk
2 cups all purpose flour more as needed

Directions:

In medium mixing bowl, soften butter slightly by creaming. Stir in sugar, salt and egg yolk.

Add flour, a little at a time, until mixture is too stiff to work with a spoon. Turn out onto floured board and knead lightly, blending in more flour until dough begins to crack.

Divide dough into 3 portions and pat into 6-inch circles on ungreased baking sheets. Pinch edges and prick all over with fork. Bake in 325 F. oven about 30 minutes or until pale golden brown.

This is one of the recipes from “below stairs” at Dundurn Castle in Hamilton, Ont. Stately home of Sir Allan MacNab, prime minister of the Province of Canada from 1854 to 1856 open year round to the public. At Christmas, specially arranged groups of school children often visit the castle for a day of mid 19th century cookie baking.
