Ingredients:

2 eggs, separated
1/2 cup granulated sugar
1 tsp. lemon extract
1/2 cup all purpose flour
1/4 tsp. salt

Directions:

In medium bowl, beat egg whites until stiff. Fold in sugar and lemon flavoring. Beat egg yolks lightly and add to egg white mixture. Add flour and salt; stir to blend well.

Drop batter onto buttered cookie sheets in 1 Tbsp. mounds. Leave room for cookies to rise and expand.

Bake in 425 F. oven for 15 minutes or until lightly browned. Makes 24 cookies.

When cool, you can spread these cookies with strawberry jam or lemon cheese for sandwich biscuits. On New Year’s Eve, they were arranged on a silver cake plate and served with ginger wine. This recipe is served and Gibson house in Toronto.
